S’mores minus the campfire

It’s summertime which means camping, campfires and s’mores! But if a campfire is not in your summer plans, you can create your own s’mores at home. Here’s a tasty s’mores cookie recipe.

These cookies are soft and chewy and include your favourite s’mores ingredients – chocolate, graham crackers and marshmallows! Give this recipe a try and let me know what you think.

S’mores Cookies

Ingredients

2 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 cup butter or margarine
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla
Chopped chocolate bar or baking chocolate (amount to suit your tastes)
App. 12 graham crackers
Regular or mini marshmallows (number to suit your tastes)

Mix together flour, baking soda and salt. Cream together butter, brown sugar and white sugar. Add eggs and vanilla and mix. Stir the flour mixture in with the butter and sugar mixture. Fold in the chocolate pieces.

Place the graham crackers in a small bag and break them into small pieces. Fold them into the cookie dough.

Drop tablespoons of the dough onto greased cookie sheets. Allow space for spreading. Flatten the cookies and top with either a large marshmallow cut in half or with a few mini marshmallows.

Bake the cookies for 8 to 10 minutes. They’re done when the marshmallows are golden brown and the bottoms of the cookies are slightly darker.
