When you’re craving chocolate and short on time, try these easy to make chocolate cream cheese cupcakes. This is one of my stand-by recipes. I often make these for my family, share these with my co-workers or bring these to various events. Buy a chocolate cake mix (any kind works – I prefer the “Devil’s Food” darker chocolate) and then mix according to the directions on the box. You can also make the chocolate cake from scratch.
Then, in a separate bowl, mix one package of cream cheese (softened) with some white sugar to taste (I usually put in about 1/2 to 3/4 cup sugar) and one egg. Throw in some chocolate chips (about 1 cup. Once again, any kind works – I prefer the semi-sweet chocolate chips). Mix.
Line your muffin pans and put chocolate batter in each topped with cream cheese mixture. Be generous with the cream cheese mixture or you’ll end up with too much left in the end. TIP: Use a cookie dropper to drop your batter and cream cheese mixture into the cups. Bake according to the directions on the cake mix box.
If you prefer your cupcakes smaller, don’t fill the cups as much. I tend to overfill and make large cupcakes. NOTE: When baking, sometimes the cream cheese mixture stays near the top and sometimes it sinks to the bottom of the cupcake – it depends how runny your mixture is. Looks different, but tastes the same.
