Drumstick anyone?

This past weekend we decided to invite some friends over for dessert after dinner out. I often go back to my favourite trusty cookbooks when looking for a recipe. As I was flipping through my Purves Country Kitchen cookbook, given to me by my mom 13 years ago, I landed on this recipe called Drumstick Dessert. I’ve made it before and it was a hit. Time to make it again. If you love peanut butter and cream cheese, this recipe is for you. And it’s simple – that’s my kind of recipe! Enjoy!

Ingredients:

Base:
2 cups graham crumbs
1 tbsp peanut butter
1/2 cup margarine

Filling:
8 oz cream cheese
1/3 cup peanut butter
1/2 cup sugar
3 eggs
1 tub Cool Whip

Directions:
Base: Mix graham crumbs, peanut butter and margarine into crumbs. Press most of it into a 9 by 13 inch pan. Cool. Save some crumbs for the top.
Filling: Cream cream cheese, sugar and peanut butter. Add eggs and Cool Whip. Spread on base. Sprinkle crumbs on the top. I also sprinkle some shaved chocolate on the top. Tip: use leftover Easter bunnies. Freeze. Do not bake. Take out a little while before serving.
